  4. Break a raw egg into a separate bowl. Add a little salt and beat until smooth.

Cod fillet with vegetable marinade

Ingredients: a kilo of fish fillet, a large yellow bell pepper, a medium carrot, an onion, half a cup of canned tomatoes, salt, seasonings.

  1. Fish carcasses are removed from fins and tails. Next, they are washed well and dried with napkins. The cod is cut into pieces, which are salted and rubbed with seasoning. Then they are fried in hot oil until golden brown.
  2. For the sauce, mix the remaining ingredients. The dill is first finely chopped.

  • bell pepper - 2 pcs;

Clean the fish from scales, remove the tail, fins and all the entrails. Wash, dry and cut into portions. Pour milk over the cod and leave in the refrigerator for a couple of hours. Heat salt, pepper and nutmeg in a frying pan. Then grind everything in a mortar and mix with flour.

Bread the fish in flour with spices and fry in hot oil for 10 minutes on both sides. After this, melt the butter and mix it with chopped garlic. Firstly, we often sell the same fish under the guise of chilled fish, but it is not clear when it was thawed. Secondly, by defrosting the cod in the refrigerator and cutting the fillets yourself, you will get a higher quality product, because, unfortunately, sometimes fish that cannot be sold whole is sometimes used for fillets. If such a complex operation as filleting fish still scares you, so be it, cook with store-bought fillets for now, but be sure to plan to learn, it’s not as difficult as it seems.

So, dry the cod with paper towels and season with salt. In a non-stick frying pan (if you don’t have one, place a circle cut out of baking paper on the bottom of a regular frying pan), heat the olive oil and fry the finely chopped garlic in it until golden. Add the butter, let it melt, mix with the olive oil, and add the fish. Fry the cod, periodically scooping oil with a spoon and pouring over the fish, over medium heat for about 3-4 minutes, then carefully turn over. If the cod does not stick to the pan, there is no need to injure the fillet with a spatula - just fry further, rocking the pan with smooth movements back and forth, and at the right moment the fish itself will leave the bottom.

Fry the cod on the other side for another 3-4 minutes and carefully transfer it to heated plates. Pour wine into the pan, let it boil, stir with a spatula with the rest of the pan until smooth, then add finely chopped parsley, stir and remove from heat. Pour the fried cod with a thick sauce in which aromatic parsley, garlic, boiled white wine, oil and cod juices are mixed, season with freshly ground black pepper and serve.
