This appetizer will be spicy and spicy. The recipe requires the following ingredients:

  • pork - 1 kg;
  • kvass - 300 ml;

While preparing for the hikes, I tried many different recipes for drying meat. These were all kinds of cheese sausages, basturma and many other meat dishes. But as a snack, they were all of little use - this is all a great addition to the main meal. The basis of the marinade is the sweet Bamboo Stalk sauce, which goes great with chicken, and classic soy sauce. Just do not take Heinz, it has a sweetish specific taste, which in our case already gives a sweet sauce.

Pepper, like coriander, I prefer in grains and grind just before cooking. Thus, the flavor of the seasoning is most saturated. Coriander is just useless in a glass with a rolling pin.

Garlic can be used both fresh and granulated. I prefer the second one, since the sharpness will still go away when dried, and there is much less fuss with it.

Pour seasonings into the chopped chicken. I always do it by sight.

And pour sauces. I don't add salt. A sufficient amount of it is available in soy sauce. If you are making not just a snack, but a beer snack, then you can add a little salt.

Then mix everything thoroughly.

At this stage, after tasting the marinade, we achieve its optimal taste by adding the missing spices or sauces. It makes no sense to marinate the chicken for a long time, just wait until it is completely thawed in the marinade. Then, on a baking sheet, cut out parchment paper of the appropriate size for baking.

We send it to the dryer. Depending on what kind of drying cabinet you have, complete drying occurs in 12-24 hours. It is necessary to completely get rid of moisture so that the chips turn out to be crispy. In my oven, the minimum is over 75 degrees, so I dry the meat with the oven door slightly ajar (the entire cooking time). No effort is required, you go about your business, and the meat gradually turns into meat chips.
