The idea of ​​cooking meat balls in gravy comes from the times when the Turkic nomadic people cooked all their food in one pot at once. But to this day, meatballs have already received their own gravy, which is best suited for their taste.

  • Salt, pepper, spices - to taste.
  • Vegetable oil - for frying.

How to choose the right ingredients

To prevent the minced meat from spreading when forming the meatballs, and also to prevent the dish from turning out too fatty, choose pork-beef or minced pork with a small amount of fat. Rice can be used either round or long.

Recipe for meatballs with rice in tomato sauce

Meatballs with tomato sauce can be cooked in the oven, in a frying pan, or using a slow cooker. The preparation of the meatballs themselves and the sauce is practically the same, so I will briefly describe each method of heat treatment of the dish at the end, and I will indicate all possible nuances of the recipe as I proceed.

  1. So, first, rinse the rice well and add the required amount of water to it, put it on the fire, bring to a boil and cook until half cooked, then add the excess water and leave to cool.

  2. While the rice is preparing, let's start with the vegetables. Peel the onions and carrots, wash them, cut the onions into small cubes

  3. Grate the carrots on a coarse grater.

  4. Place the minced meat in a bowl or other deep container that is convenient for you. To it add the required amount of onions, carrots and slightly cooled rice, salt, pepper and mix thoroughly until smooth.

  5. We form balls from the finished minced meat, like cutlets, and place them separately so that they do not stick together and interfere with further work.

The further preparation process depends on what kitchen appliances you use.
Multicooker:
Distribute vegetable oil evenly over the multicooker bowl. We fix the bowl in the device, set the “Frying” or “Multi-cook” mode and lay out the meatballs.
Fry on all sides until lightly crusted, turn off the mode, pour the sauce over the meatballs, add a little water in case the sauce is thick, close the lid and simmer in the “Stew” mode for 50 minutes.

Oven:
Place the meatballs fried in a frying pan on a baking sheet, pour the sauce on top and cook for 40 minutes at a temperature of 200 ºC.

Kitchen stove:
Place the pre-fried meatballs in a deep cauldron, pour in the sauce and simmer over low heat for about 50 minutes.

What are these meatballs served with?

If the tomato meatballs contain grains, they can rightfully be considered an independent dish. Will also go well with mashed potatoes and boiled crumbly porridges or even pasta and vegetables. Wash down your meal with any drink of your choice.

If you suffer from heartburn, blanch the onion before adding it to the minced meat.
You can add diced tomato to the minced meat. This will give the meatballs more juiciness.
Rice for minced meat can be prepared faster using the microwave. To do this, place the rice with water (1:1) in the microwave in a special bowl with a lid for 2-3 minutes until the liquid is completely absorbed.

Possible other preparation and filling options

Rice in meatballs can easily be replaced with buckwheat or oatmeal, thereby giving them a special, specific taste. You can include eggs, bell peppers, herbs or mushrooms in the minced meat. You can also make sauce for meatballs from tomato paste without sour cream, although this will somewhat “simplify” the flavor palette of the meat dish. If desired, you can include grated or crushed garlic in the sauce.

This is the most popular and simple, basic recipe for meatballs, which can be varied by using, for example, buckwheat instead of rice or sour cream (cream) as a replacement for tomato paste, and each time getting a new dish.


Minced meatballs with rice and gravy are good for a hearty lunch, but if you are cooking for children, then choose a lighter option - chicken meatballs with rice.

Ingredients:

  • 500 g minced meat (assorted beef + pork);
  • 1-1.5 cups rice;
  • 2 onions;
  • 2 medium carrots;
  • Salt, ground black pepper;
  • Homemade tomato juice - 3-4 glasses, or tomato paste - 2 - 3 tablespoons + 3-4 glasses of water;
  • Sunflower oil.

Instructions:

Boil the rice until tender, cool until slightly warm and combine with the minced meat.


Peel and wash the onions and carrots. Finely chop the onion and pour it into a frying pan with heated sunflower oil. Sauté the onion over medium heat, stirring, until it begins to soften.


Grate the carrots on a coarse grater and add to the onion. Saute the vegetables together so that the carrots become soft.


Place half of the sautéed vegetables into the minced meat with rice, add salt and pepper and mix thoroughly.



And into the second half, which remains in the frying pan, pour tomato juice or paste diluted with water (1-1.5 cups) and boil for a couple of minutes.


From well-kneaded minced meat, form round meatballs with hands dipped in water.


And now - the promised secret, which I finally tried, and I really liked the result! Previously, I immediately put the formed meatballs in a mold, poured gravy and baked them. And Katyusha taught me to do this: roll each meatball thoroughly in flour...



And put it in the boiling gravy for a couple of seconds. The meatballs set slightly and hold their shape perfectly without falling apart, and the gravy becomes thicker, like a sauce, thanks to the flour.



Place the meatballs in rows in a refractory dish greased with sunflower oil.

Pour tomato sauce on top and place in the oven.

Bake at 180-200C for about 35-45 minutes. To prevent the gravy from burning, you can cover the pan with baking foil at the end of cooking.

It must be said that meatballs with rice must be prepared from homogeneous minced meat. And in order for large pieces of vegetables and rice to be distributed evenly, mixing the minced meat is a rather labor-intensive process.

    Grind the meat into mince

  • Rinse the basmati rice and add 1 liter of cold water. Add a pinch of salt and bring to a boil. Of course, you can cook plain fluffy rice. But, unfortunately, you can often not “guess” the proportion of water and rice, and the result will be either undercooked rice or rice porridge. Boiling rice in plenty of water will ensure that the rice is cooked and does not stick together. Typically, basmati is cooked for 14-16 minutes. As soon as the grains of rice are cooked, immediately place the rice in a colander to drain the water. There is no need to rinse the rice.
  • Remove seeds and inner white membranes from the hot pepper pod - they contain the maximum amount of heat. Finely chop the pepper and garlic and add to the minced pork. Add fried onions and half of finely chopped dill and parsley - only leaves. Season with salt and pepper and add 0.5 tsp. ground coriander.

  • Mix the minced pork with vegetables and spices very thoroughly. It is important that all ingredients are mixed evenly. The salt will also dissolve as you stir. In addition, to make the pork meatballs soft, you can add a little cream to the minced meat - literally 1-2 tbsp. l. But, as a rule, this is not required.

  • Add all the pre-boiled rice to the minced meat. And mix thoroughly again. By the way, you can taste the minced meat for salt and spices - you don’t have to swallow it, just lick it.   • To bake meatballs with rice in tomato sauce, you will need a ceramic or any heat-resistant form. We will prepare baked meatballs the size of a medium-sized chicken egg. You need to estimate how many meat balls you will get from the cooked minced meat, and choose the appropriate size form with a high side. Meatballs with rice should fit tightly into the mold. Lightly grease the sides and bottom of the pan with a little butter.
  • With wet hands, form meatballs with rice and place them in the prepared pan. If there are gaps, the meat balls can be pressed a little so that they slightly diverge in size and touch each other and the walls of the mold.

  • Place any remaining butter in a cup and melt in the microwave. It is advisable that the oil is not very hot. Brush all pork meatballs with melted butter.

  • Preheat the oven to 200-210 degrees and place the form with meatballs in it. In approximately 45 minutes of heat treatment, the meatballs are guaranteed to be baked. You can check the readiness of the minced meat using a thermometer, or by cutting one meatball on the side.

  • Next, you need to pour tomato juice, a little salt and pepper, a pinch of sugar and a pinch of Mediterranean herbs over the meatballs.     The secret of the exquisite taste of this dish lies in the sauce made from olives and smoked sausages.

    Required Products:

    • 350 g minced chicken;
    • 50 g rice;
    • 1 medium carrot;
    • 100 g thicker sour cream;
    • 150 g tomato paste;
    • 40 ml oil for frying;
    • 250 ml beef or chicken broth;
    • 100 g smoked sausages (or sausages);
    • 10 pitted olives;
    • salt and spices as desired.

    Cooking technology step by step.

    1. The rice is washed, poured into boiling water and boiled for 10 minutes.
    2. The carrots are peeled, finely chopped or grated.
    3. Combine minced chicken, semi-cooked rice, carrots, and salt. Meatballs are made from this composition.

    A dish prepared using this technology will please everyone with its aroma, juiciness, and piquancy. In addition, meatballs in tomato sauce in the oven are healthier than fried in a frying pan.

    Required components:

    • 1 kg minced chicken;
    • 180 g white rice;
    • 1 egg;
    • 2 small carrots;
    • 1 onion;
    • 30 g flour;
    • 250 ml water;
    • 50 g tomato paste;
    • 40 ml sunflower oil;
    • 15 g each of dill and parsley;
    • salt;
    • a mixture of seasonings of your choice (basil, thyme, paprika, coriander).

    Cooking steps.

    1. The washed rice is boiled until half cooked (10–12 minutes), then cooled in a colander.
    2. Beat the egg, mix it with minced meat, boiled rice, seasonings, and salt.
    3. Peel and chop the onions and carrots.
    4. Heat the oil in a frying pan and add flour to it, stirring constantly so that lumps do not form. When the flour turns golden, add the onion and continue frying for another 3 minutes. Next, lay out the carrots and sauté until soft.
    5. Water, tomato paste and spices are added to frying. Boil everything for 3 minutes.
    6. The formed chicken meatballs are placed in a greased form and baked for 15 minutes at 200 degrees.
    7. Semi-finished meatballs are poured with the prepared sauce, sprinkled with chopped herbs and continue to bake at 180 degrees for another 15–20 minutes.

    Helpful tip: to make the sauce thicker, you can add 20 g of corn starch.

    Fish meatballs in tomato sauce

    To prepare these meatballs, it is better to take white fish: cod, hake, perch, pollock. These types are low in calories, so the dish is suitable for anyone on a non-strict diet.

    Ingredients:

    • 400 g fish fillet;
    • 1 zucchini;
    • 1 egg;
    • 1 small onion;
    • 2 tomatoes;
    • 100 g tomato paste;
    • 250 ml beef bone broth;
    • 100 g sour cream;
    • 5 g sugar;
    • 25 ml oil for frying;
    • salt and spices as desired.

    Recipe.

    1. The fish fillet is minced in a meat grinder along with onions.
    2. Peeled zucchini is grated on a medium grater.
    3. Mix minced fish, zucchini puree, egg, salt. Make small cutlets.
    4. Semi-finished products should be fried in a frying pan with oil on both sides for 2 minutes.

    • 150 g minced pork;
    • 150 g minced lamb;
    • 1 egg;
    • 50 g rice;
    • 8 pitted prunes;
    • 1 sweet pepper;
    • 2 tomatoes;
    • 1 carrot;
    • 150 g fat sour cream;
    • 300 ml meat broth;
    • 150 g tomato paste;
    • 30 ml vegetable oil;
    • salt, coriander.

    Cooking steps.

    1. Boil the rice until almost done and cool.
    2. Minced meat is prepared from lamb, pork, rice, and eggs. Salt everything and mix thoroughly.

    • 70 g rice;
    • 1 standard onion;

    • 20 g flour;
    • 700 ml water.

    1. The rice is cooked for only 8 minutes. Once it has cooled, combine it with chopped onion, minced meat, egg, black pepper, and salt.

    Initially, I will say that tomato sauce can be easily replaced with homemade lecho, for example, you can dilute tomato paste with some water, chop a sweet pepper and add garlic. You can add herbs and seasonings to suit your taste. I made it - tomato with sour cream, it tastes better to me.

    So, the very first thing for good meatballs is the right minced meat. I once tried to make it from chicken fillet, it turned out to be a little dry, from one pork fillet it was a bit fatty, and through trial and error I found out that the best, juiciest and most delicious meatballs are made from minced pork and beef. Therefore, we go to the nearest market and buy good meat.

    The first important thing is done, we have decided on the tomato sauce, now - rice. As for me, it tastes better with round rice, like Krasnodar, it’s tasty in itself, with long rice it turns out blander, but that’s how you like it. My preference is round rice.

    Now regarding the quantity - some people put less rice, more meat, I take about 1/3 of the total weight of rice, and it turns out just right.

    Onion - you can chop it finely, you can also grind it on a grater, turning it into a kind of liquid, drain the juice - also at your discretion, I just grind it together with the meat in a blender.
    So, we have considered all the nuances, now let’s start cooking.


    Now you need to mix the minced meat well, mash it, even beat it a little - this way the meatballs will hold their shape more tightly and will not fall apart during stewing and frying.


    That's it, the minced meat is ready, now let's prepare the sauce. I lightly fried the flour in a frying pan, added the tomato, mixed, poured in water and added sour cream. I added some salt, a little pepper and in a minute the sauce was ready.


    Next, the meatballs should be fried so that they do not lose their shape during further cooking. If you finish cooking the meatballs with rice in the oven, you can skip this process, immediately put the meatballs in the mold, pour in the sauce and bake. I cook meatballs in a frying pan (in a cauldron or saucepan the same thing happens), so I lightly fry them.

    For children or sick, old people, people for whom dietary food is indicated, you can cook meatballs with steamed rice. But in this case, you need to add a couple of slices of a white loaf, soaking it in milk and squeezing it out - this is so that the meatballs don’t fall apart and keep the texture stronger, because you won’t fry them. Then just carefully place them in the steamer and after 30 minutes the fragrant and tender meatballs are ready.

    Here everything is similar to the first recipe, with the only difference being that you can immediately put the meatballs in a bowl, pour the sauce over it, turn on my favorite Stewing mode for an hour, in which the meatballs will simmer like in my grandmother’s oven, and that’s it, the process has begun.

    Baby meatballs

    Another interesting option for kids is meatballs in milk sauce, for kids. Here the rice is pre-boiled and 1 liter of milk is used instead of tomato sauce. And don’t add the egg either, the meatballs will be more tender and healthier. But - here we need to beat the meat well so that it becomes elastic, and our meatballs stick together well. And then wrap the finished minced meat in film and let it ripen in the refrigerator for about 30 minutes.

    Then place the meatballs molded into balls into the prepared pan, pour in milk and place in the oven. At the same time, set the temperature to about 150 degrees, let it simmer there for 50 minutes so that the milk is absorbed. However, if you want a thick sauce, you can do this: when the meatballs are ready, drain the excess milk from them, boil a spoonful of flour in it, return it and simmer them for another 10 minutes.

    Meatballs with mushrooms


    An option for gourmets - tasty, aromatic, satisfying and piquant. Here the meatballs are also cooked in tomato sauce with sour cream in the oven; they turn out unusually tender, juicy, and very tasty.
