I'm more and more fascinated with dates - how wonderful they are in baking!

Compound:

  • 500 g pitted dates
  • 300 g flour
  • 100 g butter
  • 100 g sour cream
  • 100 g sugar
  • juice of half a lemon
  • 1 teaspoon of soda
  • a pinch of salt

How to cook cookies with dates - recipe:

  1. We take the butter out of the refrigerator in advance and let it soften.
  2. Mix butter, sour cream and sugar and grind until smooth.

  3. We survive the juice from half a lemon.
  4. Add soda to juice and mix well. A violent reaction begins, we observe and enjoy the wonders of chemistry. Add a pinch of salt.
  5. Mix the flour with the resulting mixtures. Knead the dough for a short time until smooth. The dough will be a little sticky to your hands, but after the cold will become more pliable. But after baking, the cookies will be very tender.

  6. So, wrap the dough in cling film and send it to the refrigerator for 30-40 minutes.

  7. Meanwhile, prepare the date paste. Soak dates in water for 10 minutes.

  8. Separate the pulp of the dates from the pits and scroll through a meat grinder until a homogeneous puree. You can also grind in a blender, but through a meat grinder it turns out better and faster.

  9. When the dough has cooled a little and becomes more docile, we take it out of the refrigerator and divide it into two equal parts.

  10. Roll out each of the parts into a rectangle measuring 30 × 20 cm, about 5 mm thick.
  11. Put one piece on a baking sheet. Spread the date filling evenly on top.

  13. Cut off the rest of the dough (if any) so that you get an even rectangle.
  14. We make even cuts along and across the rectangle, shaping the cookies. Since I wanted to completely repeat the store masterpiece, I cut it into rectangles.

  15. We send the baking sheet to the oven preheated to 180 degrees for about 20 minutes.

Cookies "Mamul" is a very famous variety of oriental sweets. Distributed in Syria, Jordan, Palestine, etc. There are similar recipes in other Arab countries, but with slight differences in the composition of the test.

Usually, such cookies are prepared for future use and served to guests for tea. It is very well stored, you can even freeze the finished cookies and take them out as needed. It is very soft, fragrant and truly oriental. Help yourself!

Ingredients:
Dough
Water 125ml
Rose water 1 tsp
Dry yeast 1 tsp
Semolina 250g
Sunflower oil raf. 100ml
Plum oil. 200g
Wheat flour 800g
Baking Powder 4g
Sax. powder 25g
Salt 1 pinch
Chicken eggs 1pc

Filling
Water 30ml
Turkish delight 100g
Dried dates 500g

Cooking:


To prepare Mamul cookies, we need flour, semolina, butter, sunflower oil, water, powdered sugar, baking powder, yeast, salt, rose water, an egg for lubrication.


To the softened butter, add powdered sugar, salt and mix.


Then pour in sunflower oil, rose water, mix again. (If you need to replace rose water, use almond extract (use less) or vanilla extract (less), or rose essence)


Add warm water, stir. The liquid mass will not be homogeneous.


Separately, we combine the dry ingredients: most of the flour, semolina, baking powder and high-speed yeast.


We mix.


And pour into the oil mass.

Sprinkle a small portion of the rest of the flour.


And knead a soft elastic dough.


Put the dough in a deep bowl, cover with cling film and leave warm for 2 hours. During this time, it will greatly increase in volume.

And return to the bowl, cover with cling film, send to the refrigerator for another 2 hours. I left it overnight. The dough will rise again. Before using the dough, take it out of the refrigerator and let it warm up.


For the filling in cookies, we need Turkish delight, dates and some water.


We heat Turkish delight in the microwave for 20 seconds. They will become soft and pliable.


Remove the pits from the dates.


Pour them into a dry pan.


And cook for 15 minutes on low heat. When the dates begin to stick to the pan, add water. You should get a homogeneous mass. Remove the pan from the heat and let the dates cool down a bit.


We pinch off a small piece of dough and roll it into a layer 2-3 mm thick.


Squeeze out small circles.


Place a piece of Turkish delight in the center of each circle.


Pinch the dough and roll into balls.

How to cook it?

1. Cooking the dough (first day):

Mix flour and semolina in a mixing bowl

2. Cooking the dough (second day):

Dissolve yeast and salt in a glass of warm milk. Wait for the tremors to dissipate. Add to dough, knead well and leave to rise until fluffy (1 hour+)

3. Cooking the stuffing from dates or dried fruits

Pour the date paste into a bowl. Or chop pitted dates and figs or prunes (cut or mince). If you use dried fruits, then first you need to soften them - boil a little or pour hot water for 10-15 minutes

Add vegetable oil and flavoring to the dates. Mix well to get a homogeneous mass.

4. Cooking cookies:

Blind or roll small balls from the filling - according to the size of the cookie

Roll the dough into a sausage, cut into pieces. Roll out each piece into a cake

Put a filling of dates or dried fruits on each cake

Take it in one hand, and with the other close the edges to the middle to make a round pie

Roll the pies neatly into balls. Put in a carved mold, slightly pressing

Tap the mold on the table so that the printed pattern drops out. Nut-filled biscuits are usually made flat to bake. If there is no molding, then the pattern is pressed through with a fork or seal

Line a baking sheet with baking paper. Lay out cookies. Bake in a preheated oven for 20-30 minutes at 180 degrees. Cookies with nut filling - 10-20 minutes

  • First, mix flour with melted butter. The end result should be a crumb-like consistency.


  • After that, you will need to add sugar and an egg to the mass. The resulting dough is wrapped with cling film and placed in the refrigerator. There the mass should be within one hour.


  • For the next step, we need parchment paper. We put the dough on one sheet, and cover it with the second. We begin to roll out the mass. The result should be a thin layer of dough. Then remove the top sheet.


  • Roll out the date paste in the same way. After the dates have turned into a thin sheet, we transfer them to the rolled out dough. And you can cook date paste as follows. It is enough to separate the dates from the pits, place them in a double boiler for fifteen minutes, after which you will need to beat the pulp thoroughly in a blender. Everything is very simple. The finished paste will have a puree-like consistency.


  • The bottom parchment sheet is useful to us to create a roll. Carefully lift it up from one stolon and gradually twist the dough and dates. We send the roll to the refrigerator for one hour.


  • We take it out after the specified time and cut it into small slices. Their thickness should be approximately five to seven millimeters (see photo). Lay them out on a baking sheet with parchment paper. It is advisable to preheat the oven to one hundred and eighty degrees in advance, and place a baking sheet in it. Bake cookies for ten to fifteen minutes. The next thing to do is to get the finished treat and wait until it cools down.
