We will need:

  • Cucumbers - 2.5 kg.
  • Tomatoes (red or green) - 2 kg.
  • Sweet pepper - 0.5 kg.
  • Garlic - 2 heads;
  • Vegetable oil (odorless) - 150 ml.
  • Vinegar (9%) - 80 ml.
  • Sugar - 1 cup;
  • Salt - 2 tbsp. spoons (with a slide);
  • If desired, you can add: black pepper, red, cloves;

Let's start cooking

First you need to prepare all the vegetables, namely, wash them, remove parts of the stalks, cut the cores with seeds from the peppers.

Now we pass peppers and tomatoes through a meat grinder. We put a saucepan with scrolled vegetables on the stove, alter until a puree is uniform in color.


Next, you need to pour sugar and salt into this tomato mass. Here we pour the oil. I recommend using refined, but if you like the flavor of the seeds, you can use unrefined. Stir again and turn on medium heat.


Bring to a boil, stir occasionally to prevent scorching. Once it boils, lower the heat a little and simmer for 10 minutes.


While the tomato filling is cooking, you can do the cucumbers. We remove the peel from them, divide into slices and cut into such small pieces. You should not grind too much, otherwise it will turn out not a salad, but vegetable caviar.


10 minutes have passed - put the chopped cucumbers in a boiling tomato sauce, mix so that each piece of cucumber is hidden. Bring to a boil again and cook for about 5 minutes.


Peel the garlic cloves and pass through a special crusher. Add it to the vegetables.


Pour in vinegar, mix well, wait a few more minutes, then you can already remove from the stove.

Rinse glass jars with boiling water, do the same with lids. We put another hot salad, the jars should be filled to the brim with it. Close the lids, turn over and wrap with a towel to cool completely.


The final output of the product is 3 liters, just everything fit in 3 one-liter jars.

Cucumbers in tomato juice for the winter (awesome recipe)

And these are ordinary-looking pickled cucumbers with one exception - tomato juice is used instead of water. Thanks to this, cucumbers acquire a special taste. Everyone who has tried it raves about this recipe.

  • Salt - 50 gr.
