  • Sugar – 1 glass;
  • Kefir – 1 glass;
  • Baking powder – 2 teaspoons;
  • Vegetable oil – 1/3 cup;
  • Raisin.
First you need to beat the eggs with sugar.


Then add 1 glass of kefir and mix well.


Next, gradually add flour to the egg-kefir mixture, stirring continuously so that no lumps form in the dough. Add baking powder and vegetable oil. Mix everything well.


Now add well-washed raisins to the dough. Instead of raisins, you can use nuts or candied fruits.


It is necessary to mix everything thoroughly.


I have a special mold for making cakes, namely a metal one with wavy sides. But you can use any other baking dish in the oven.
Tip: To prevent the cake from sticking to the pan, you can sprinkle it with semolina or breadcrumbs.

  • 4 eggs,
  • 300 grams of sugar,
  • 200 grams of margarine or butter,
  • 600 ml kefir (yogurt, sour milk),
  • 600 grams of flour,
  • 1 teaspoon of soda,
  • 250 grams of raisins or to taste (I used not only raisins, but also dried cherries, dried apricots and dried mango and took about one and a half times more dried fruits, I like it when there is a lot of them),
  • 2 tablespoons vanilla sugar.

Recipe for making cupcakes with raisins using kefir.

I must warn you right away, there is quite a lot of dough. I somehow didn’t pay attention to it right away, I was too happy about such a great opportunity to dispose of a large amount of sour milk. And when I realized, there was nowhere to go. From the specified amount of ingredients I got 1 large cupcake and 12 small ones.

Place soda in sour milk. Stir well. Melt the butter. Wash and dry the raisins (or other dried fruits) (cut large dried fruits into small pieces).

Beat eggs with sugar and vanilla sugar. Add butter and mix everything well.

Add sour milk to the egg-butter mixture and mix everything well again.

Sift the flour, add it to the liquid ingredients and mix everything.


Place raisins (dried fruits) into the resulting dough. Let's stir.

Grease the muffin pan with vegetable oil (the silicone mold just needs to be rinsed with water). Small molds also need to be greased. But personally, I prefer to put a disposable paper mold inside the main mold.

Fill small muffin tins about 2/3 full with batter. Place the remaining dough in a large cake pan.


We will bake small cupcakes at 160 degrees for about 30-40 minutes.

Large cake 60-90 minutes. Perhaps longer. It all depends on the features of the oven.

You can check the readiness of the cupcakes with a toothpick.


My first cupcake with raisins and papaya on kefir

Very often there is simply not enough time for some complex recipes, which is why those that can be made in a hurry are so valued. This is especially important if there are small children at home. So, today I want to invite you to bake kefir cupcakes in silicone molds, which are prepared very quickly and easily. I use the most common products; if you wish, you can slightly adjust them to suit yourself, as I will tell you exactly how below.

I will make the muffin recipe using margarine with raisins, which can be replaced with other dried fruits if desired, and bake in small molds. The advantage of such forms is that they do not need to be lubricated at all, because nothing ever sticks to them. The cupcake recipe is very good, so I definitely recommend trying it.

Ingredients:

  • Chicken eggs – 3 pcs.
  • Sugar – 1.5 cups
  • Kefir – 300 ml.
  • Margarine – 200 g
  • Flour – 2 cups

How to cook cupcakes

The cake batter for this recipe is very easy to make. I beat the eggs into a bowl and add sugar, then beat them with a mixer for three minutes until foamy.


Melt the margarine and leave to cool slightly. Also, if you want, you can always replace it with butter. Pour cold kefir, warm margarine, baking powder into the whipped mass and mix.


Then I add two glasses of flour, which I sifted through a sieve in advance. One glass contains 200 ml, remember this when measuring all the ingredients to get the same result.


Pour hot water over raisins or other dried fruits and leave for 5 minutes, then rinse them under running water and remove the remaining moisture with a paper towel.



As I already said, I will bake kefir muffins in silicone molds and there is no need to grease them with anything beforehand. I put two teaspoons of the dough into the molds.


I bake the cupcakes in an oven preheated to 190 degrees for 20 minutes until golden brown. To make sure they are ready, just pierce one of them with a wooden toothpick; if it is dry after that, I take them out of the oven.


The finished products are very easy to remove from the mold; to do this, simply turn it over. I transfer them to a plate and leave to cool. The recipe for this cake is one of the easiest to prepare; even a beginner can handle it. Thanks to the liquid dough and precise proportions, you will definitely not have any difficulties in the process.


You can sprinkle them with powdered sugar or pour chocolate on top, but I decided to leave it that way. Delicious kefir cupcakes in silicone molds are ready.

Ingredients: 2 large spoons of full-fat kefir, 2 teaspoons each of baking powder and granulated sugar, 1 large spoon of vegetable oil, 1.5 large spoons of white flour, cinnamon to taste.

  1. In one bowl combine the sifted flour and baking powder, in the other - the other ingredients.
  2. The dry mixture is gradually mixed into the base.
  3. The resulting dough is placed in a cup.

In a microwave oven at full power, the dessert is cooked in 1.5-2 minutes.

Homemade chocolate cake with kefir

Ingredients: a cut glass of high-grade flour and full-fat kefir, half a stick of butter, 2 eggs, 160 g of granulated sugar, 5 tbsp. spoons of cocoa powder, 12 g of vanilla sugar, 2 teaspoons of baking powder.

  1. First of all, the butter is cut into pieces and melted in any convenient way until soft. Sand is added to the liquid mass. The ingredients are first mashed with a fork. Then raw eggs are poured into them, and the mixture is beaten with a mixer or a special blender attachment.
  2. Not cold kefir is poured into the base for the dough.
  3. Flour is sifted into a separate bowl from a high distance and all other ingredients are added.
  4. The masses from the second and third steps are combined.
  5. The dough is poured into any suitable form, which is placed in a well-heated oven for about half an hour.

The finished chocolate cake is removed from the oven, covered with a towel and left for 12-14 minutes. Then it can be sprinkled with powder or decorated in any other way.

Delicate and fluffy delicacy in a slow cooker

Ingredients: a cut glass of medium-fat kefir and the same amount of granulated sugar, 2 full glasses of high-grade flour, a pinch of salt, 1.5 tbsp. spoons of baking powder, 3 eggs, half a stick of unsalted butter.

  1. Raw eggs are poured into a deep container and beaten until thick foam. Slightly warmed kefir is also sent here. A product at room temperature will also work. But cold kefir can deprive the cake of its splendor.
  2. All that remains is to add melted butter and all other ingredients from the recipe to the mixture. Lastly, sifted flour and baking powder are poured into the bowl.
  3. The bowl of the “smart pan” is greased and only after that the dough is poured into it. The mass is carefully leveled from above with a wide spatula.

The cake in question is prepared in a multicooker in a program intended for baking for 90 minutes.

With raisins

Ingredients: 130 ml of full-fat kefir, a pinch of salt and vanillin, half a stick of unsalted butter, 2 eggs, 170 g of granulated sugar, 1.5 tbsp. high-grade flour, ½ teaspoon of baking soda, 120 g of light raisins.

  1. The oil softens and is then ground with sand. Add eggs to the mixture one at a time. The ingredients are well mixed.
  2. Add cold kefir and soda.
  3. Pour in pre-steamed and dried raisins, as well as flour with vanillin and salt.
  4. Thick dough is laid out in a rectangular shape.

The cake is baked on kefir with raisins until the skewer is dry for 50-55 minutes at 190 degrees.

Bread machine recipe

Ingredients: egg, a whole glass of warm kefir and granulated sugar, 90 g of creamy margarine, 2 tbsp. high-grade flour, half a bag of baking powder.

  1. First, raw eggs and sand are beaten in a bowl.
  2. Then all other components are gradually introduced to them. The last is pre-sifted flour with baking powder.
  3. A thick dough is kneaded and mixed into the bowl of the device, lightly greased with oil.
  4. In the Cupcake program, the treat is prepared until the program ends.

The treat is decorated with a mixture of cocoa powder and powdered sugar.

With liquid filling

Ingredients: 220 g of creamy margarine, a glass of walnut kernels and semolina, 3-3.5 tbsp. high-grade flour, half a liter of full-fat kefir, 2 tbsp. granulated sugar, 2 chicken eggs, 1 teaspoon of baking soda and the same amount of table vinegar, any filling option.

  1. First, the semolina is poured with warmed kefir. The mixture will swell while all other ingredients are prepared.
  2. The margarine is melted over low heat. Sand is poured directly into the warm mass, raw eggs and soda slaked with table vinegar are added. The ingredients are mixed until the sweet grains dissolve.
  3. Fermented milk product with semolina is poured into the resulting dough base.
  4. All that remains is to add chopped walnuts and flour.
  5. The dessert is baked in a well-heated oven for about half an hour.

A special device is used to remove the center of each cupcake. The resulting space is filled with any liquid filling of your choice: chocolate icing, condensed milk, jam, etc.

Cottage cheesecakes with kefir

Ingredients: a glass of cold kefir and granulated sugar, 4 eggs, ½ teaspoon of soda, 220 g of cottage cheese, 2 full glasses of high-grade flour.

  1. Raw eggs, cottage cheese and sand are immediately sent into a deep bowl. These ingredients turn into a homogeneous liquid mixture in about a minute at low mixer speed.
  2. Next, kefir is poured into the mass and beating continues.
  3. Under the same conditions, flour is poured into the dough base in small portions. At the end, soda slaked with lemon or vinegar is added.
  4. After the next kneading, the dough is poured into molds.

Cupcakes are baked with kefir for about half an hour at medium temperature.

Zebra cupcake

Ingredients: 3 eggs, a full glass of medium-fat kefir, 4-5 tbsp. spoons of cocoa powder, 1 teaspoon of baking soda, a full glass of granulated sugar, 320 g of high-grade flour, vanilla to taste.

  1. Raw eggs are beaten with sand until the sweet grains dissolve. Kefir and soda are poured into the resulting mass.
  2. Vanilla and flour are added.
  3. The dough is divided into two parts. Cocoa is poured into one of them.
  4. Place 2 large spoons of dough of different colors into an oiled pan. You can use a toothpick to draw a neat web on it.

The Zebra cake is baked in a preheated oven for 35-45 minutes until the skewer is dry.
