Baileys is a world-famous cream-colored liqueur with 17% alcohol content and an amazing creamy caramel taste. It appeared in Ireland more than 40 years ago and since then has been very popular in any city. The original recipe, dated November 26, 1974, called for mixing cream, whiskey, vanilla, caramel, sugar and chocolate. Despite the fact that the production technology is still kept in the strictest confidence, there are several ways in which you can make Baileys liqueur at home.

Peculiarities

This milk liqueur has a number of useful properties, the main thing is that it helps get rid of depression and cheer up. The production principle assumes that each part of the whiskey is covered with a part of the cream. Subsequently, cocoa and other ingredients are added to the resulting mixture. Naturally, repeat at home original technology difficult. However, preparing the drink itself at home is not as difficult as it might seem, even using ordinary ingredients. It is important to use only natural and quality products. A bottle of Baileys, unopened, can be stored for up to 18 months, but, as the authors of the original recipe advise, the liqueur is best consumed immediately.

Drink base

Whiskey and cream are the main ingredients of the drink. However, to make Baileys with your own hands, you don’t have to resort to buying expensive products in the store. You can use ordinary high-quality vodka and full-fat milk. But, if you use cream for cooking, you should monitor its fat content, which should be at the level of 30%. The thickness of the liqueur depends on this ingredient.

Classic recipe

There are many different ways to prepare Baileys: with mint, coffee or cinnamon. But the closest to the original taste is classic recipe. To prepare it you need to use only four products:

  • vodka or whiskey good quality- about.5 l.;
  • 30 percent cream - 350 ml;
  • condensed milk – 380 g;
  • vanillin – 1 sachet.

The main thing is not to buy cheap alcohol, since problems may arise both with the preparation itself and with the taste, which will radically ruin the entire impression of the drink.

  1. The first step is to whip the cream. For a faster and better effect, they should be cooled in advance.
  2. After a couple of minutes, continuing to beat, add vanillin and sweeten everything with condensed milk, which should be poured in a thin stream.
  3. After 5 minutes, add vodka to the resulting mixture and mix thoroughly until smooth.
  4. After completing all the steps, leave the milk liqueur to infuse for at least 2 hours, or at most for a couple of days.
  5. The recipe involves constantly shaking the bottle to avoid sediment and maintain a uniform consistency.

As a result, a viscous cream-colored mass with a subtle creamy taste and a sweetish smell should form. Is it better not to consume the resulting homemade Baileys right away? when it brews well (3-4 days), its taste will be as close as possible to the original liqueur.

Gourmet recipe

Also, one of the most common and sophisticated cooking methods is the following recipe. This option assumes that you need to make your own alcohol base for the drink. It is better to prepare it in advance.

For the alcohol base you will need:

  • granulated sugar – 3–4 tbsp. l.;
  • ginger – 1/3 tsp. (ground dry);
  • vanillin – up to 8 g;
  • ground oak bark – 1 tsp;
  • honey – 3 tsp;
  • food grade alcohol 60% – 400 ml.

Main components:

  • cream 10% - 1l.;
  • condensed milk - 380 g;
  • eggs (yolks) – 2 pcs.;
  • instant or natural ground coffee– 2 tsp;
  • vanillin or vanilla sugar - 2 sachets.

  1. First you need to prepare the alcohol base. To do this, fry the sugar until light brown.
  2. Pour in ground ginger, vanillin, oak bark, and honey.
  3. Pour the resulting mixture with alcohol, close tightly and leave to infuse for at least 5 days. Stir daily and filter at the end of the period.
  4. To make the milk liqueur itself, you must adhere to the following steps.
  5. In a deep bowl, beat half a liter of cream and egg yolks until smooth.
  6. Add condensed milk, coffee and beat again.
  7. After mixing, add cream, alcohol base and 1.5 bags of vanillin.
  8. Pour the resulting drink into a container and let it brew in the refrigerator for 4 days.
  9. After infusion, you will get a liqueur with a fatty layer on top. This layer must be carefully removed, and Baileys itself must be filtered and bottled.

Using the resulting liqueur, you can prepare various cocktails or desserts. Any baking recipe will become more refined after adding a small amount of Baileys to it.

"Baileys Irish Cream" has won the hearts of millions of people on the planet thanks to its wonderful aroma, as well as its softness and delicacy of taste.

Description. This alcohol is creamy in color and has a creamy caramel taste and contains 17% pure alcohol and 20 grams of sugar per 100 ml. It should be stored at a temperature no higher than +25°C. Shelf life if observed temperature regime– 2 years (regardless of whether the bottle is opened or sealed).

Produce drink in Ireland, a country famous for its mild alcohol. This is done by R&A Bailey & Co.

Short story: in 1970, David Dand, together with a company from Gilbeys of Ireland, decided to create a new alcohol. They decided to make it tender, soft and tasty, not too strong and completely natural. The solution came immediately: cream and whiskey gave an amazing taste, but this combination was not sustainable. For four years there was a struggle to create a super liqueur formula. And a solution was found. On November 26, 1974, in one of the outskirts of Dublin, a homogeneous mixture of cream and whiskey, flavored with vanilla, caramel, sugar and chocolate, appeared. Thus, David Dand first received a patent for a new alcohol, and then registered a new company, R&A Bailey & Co. She introduced the liqueur to the whole world.

Production technology. Kept secret. Each batch is subject to quality control. All components in the liqueur recipe, including additives, are only natural, made in Ireland. Preservatives and artificial colors are not used.

Types and varieties: In addition to the classic creamy Baileys, as well as coffee and hazelnut, in 2005 the company’s range expanded with two more types. Mint-chocolate and cream-caramel liqueurs appeared, which became no less popular than their earlier counterparts.

Application. Baileys is so good-looking that he has found himself in many forms. Mind-blowing cocktails are prepared from it, mixed with other alcohol, added to coffee instead of sugar and cream, and to numerous desserts: cakes, pastries, ice cream, cookies, and even fruit salads. It gives any product that comes into contact with sensuality and luxury, coziness and tenderness. It is not recommended to mix it only with tonics, sodas and citrus juice (acids and gas can cause the cream in the liqueur to curdle, and the drink itself will lose its velvety melting taste).

Contraindications: liqueur should not be drunk by those who have not reached the age of 18, who have serious diseases of the liver, kidneys, digestive tract, central nervous system, and also if you are intolerant to whey protein, pregnant or breastfeeding.

How to drink correctly: As an independent drink, Baileys is drunk from liqueur glasses barely chilled (the bottle is cooled extremely rarely, for example in extreme heat). If it is served with ice, then the volume of the glassware changes, and the drink is served in wine glasses or for martini. The liqueur is a digestif, which means it is served at the end of the meal, along with dessert.

What to snack on. Liquor is not eaten. But it will be perfectly complemented by ice cream, desserts (including jellies, milk and cream souffles, etc.), bananas and strawberries, chocolate, marshmallows, cookies, peanuts or cottage cheese.

Baileys can be prepared at home without any problems. Of course, we will not present here original recipe manufacturer, but taste qualities You won’t be able to tell the difference between branded liqueur and liqueur unless you are a professional taster.

You can easily use liqueur prepared yourself in cocktails (except for puff pastries, since the density homemade liqueur will be slightly different from the factory one), as additives to desserts, coffee, or as independent alcohol. However, be careful, homemade liqueur should only be stored in refrigerators, and certainly not for 2 years. 5-6 months is quite possible. But it is better not to store it for a long time, but to prepare a fresh drink if necessary.

We will give you several recipes for this wonderful liqueur, and in each of them you will encounter some points that you can adjust at your discretion:

  1. Both Irish whiskey and high-quality vodka can be used as the basis for Baileys. By the way, you shouldn’t skimp on it. Poor quality vodka will negate all your efforts and efforts.
  2. Don't worry if a small sediment forms in the bottle during the infusion process. It depends on the quality of the cream. Just shake the liqueur.
  3. Don't be alarmed that your drink won't be as thick as the original, this is normal. If you want, you can add a component such as egg yolk to any of the recipes. For 0.5 liters of alcohol, take two of them. It is believed that the yolks make the liqueur thicker and softer.
  4. The liqueur does not have to steep for three days. If you lack time, you can limit yourself to two to three hours.

Before we offer you a fairly quick Bailey's imitation, we'll write down a recipe that requires some fiddling with, but everyone who has used it has been absolutely delighted with the result.

"Classic Baileys"

The cooking technology for this recipe will take place in two stages.

  1. Preparation of alcohol base
  • sugar – 3-4 tbsp.
  • ground ginger - 1/3 tsp.
  • cinnamon - a pinch
  • vanillin – 6 gr. (3 sachets) /do not replace with vanilla sugar/
  • honey – 2 tsp.
  • oak bark – 1 tsp. (with a slide)
  • alcohol 60% - 400 ml or a mixture of 200 ml alcohol 60% and 200 ml whiskey

We make brown caramel from sugar over the fire. We add ginger, cinnamon, vanillin, honey, and pharmaceutical oak bark into it. Gradually add alcohol to the caramel mass and let it sit for about a week (maybe 5 days). Shake the suspension daily and filter at the end.

  1. Preparation of liqueur
  • cream 10% - 1 liter
  • condensed milk – 1 can
  • yolks (preferably from home eggs) – 2 pcs.
  • instant coffee – 2 tsp (dilute in 1 tsp water)

In a bowl, beat the yolks with half of all the cream, while continuing to beat, slowly add condensed milk and coffee, then the remaining cream. Pour alcohol into the homogeneously whipped mass and beat last time. Stir vanillin into the mixture and keep in the refrigerator for three days (without pouring into bottles). Collect excess fat from the surface of the liquor, and the rest of the drink should be filtered through a cotton cloth and bottled.

If you are not able to spend so much time making liqueur, then use simpler, but no less effective recipes that are just as good for desserts, ice cream, coffee and cocktails as the previous one.

  • Prepare 4 tablespoons of caramel, that is, burn sugar over the fire. Don't be afraid if the sugar turns out very caramelized - it's even better.
  • Add to the resulting and cooled caramel a third of a teaspoon of ground ginger, 6 grams of vanillin (namely vanillin), a pinch of cinnamon, two teaspoons of honey, one teaspoon of oak bark.
  • Fill the resulting mixture with 60% alcohol (). If you have whiskey, you can pour half and half alcohol and whiskey. There should be a total of 400-420 ml of liquid.
  • We leave this alcohol base for about a week in a dark place, shaking occasionally.

When the alcohol base has stood for a week, we filter it from small particles and proceed to the next stage, for which we will need:

  • two egg yolks (you need to understand that raw eggs must be from domestic chickens or purchased from a trusted place)
  • 350-400 grams of thin condensed milk
  • liter of fresh cream (10% fat)
  • two teaspoons of instant coffee diluted in half a tablespoon of water

Let's start preparing homemade Baileys:

  • Beat half a liter of cream and egg yolks until smooth and pour into a large saucepan.
  • Gradually add coffee dissolved in water and condensed milk and beat again.
  • Add the remaining half liter of cream and beat until smooth.
  • Now add our alcohol base to this creamy mass and beat again.
  • All that remains is to add four grams (two bags) of vanilla sugar (namely sugar), mix and refrigerate for 4-5 days.

If after these days you find fat on the surface of the finished drink, simply carefully remove it and throw it away. Filter your homemade Baileys through a cotton cloth and you can bottle it or start drinking it.
