The taste of fried zucchini depends not only on the skills of the hostess, but also on the freshness of the selected products. As for zucchini, ideally, you need to take the so-called "dairy", that is, young and fresh, with a thin skin and seeds that are just starting to form.

Let's start with one of my favorite options. According to it, the vegetables are very juicy, and the taste is not interrupted by other ingredients. Just garlic for flavor, flour for light breading, and sour cream (optional) for flavor.

For cooking you will need:

  • Zucchini - 3 pcs
  • Garlic - 5-8 cloves
  • Salt, pepper - to taste
  • Sour cream (10-15%) - 250 g

Cooking:

1. Wash vegetables, cut on both sides and cut into rings about 1 cm thick.

2. In a deep bowl, mix flour with salt. In this case, usually 1 teaspoon of salt is taken for 1 cup (200 ml) of flour. And in this mixture roll the zucchini on both sides.

  • A couple of tablespoons of mayonnaise
  • A couple of cloves of garlic

Well, before we move on to slightly more complex recipes, let's see how to fry the most lean zucchini without anything. Only a small amount of vegetable oil for frying.

And doing it is very simple. All you need is:

1. Wash and cut vegetables into thin rings (thickness no more than 5 mm).

The thinner the circles, the faster they will fry and the less oil they will absorb.

2. Put them in a preheated pan with vegetable oil, standing over medium heat. Fry on one side for 2-3 minutes until golden brown.

3. Turn the zucchini over, reduce the heat to a minimum, cover the pan with a lid and simmer for 5-6 minutes.

A little more hard way involves the use of kefir (or yogurt), which makes the batter fluffy. Many people like it.

Ingredients:

  • Young zucchini - 2-3 pieces
  • Garlic - 2-3 cloves
  • Salt pepper

  • Kefir or yogurt - 100 g
  • Eggs - 1-2 pcs
  • Flour - 3-4 tbsp

For sauce:

  • Sour cream
  • Greenery
  • Garlic
  • Salt pepper

Cooking:

To prepare one serving, half a young zucchini, a pinch of salt, juice of a quarter of a lemon and a couple of fresh mint leaves are enough.

  • 1-2 small zucchini (young ones)

Wash the zucchini and dry it on a paper towel. Cut the zucchini into slices about half a centimeter each (approximately).

The next thing I do is peel and squeeze the garlic through a press. I add a couple of tablespoons of mayonnaise to the bowl and squeeze the garlic.

Garlic can be finely chopped with a knife, but I like it when it is squeezed through a press. For me, it tastes better and is much more convenient.

I also add salt to taste as I don't salt the zucchini when roasting. In order not to form excess liquid and vegetable oil does not splash in all directions. This is the first secret.

In mayonnaise with garlic, you can optionally add greens, dill, parsley, you can black ground pepper. Who loves what. I didn't add.

As for mayonnaise. It can be prepared at home with eggs, lemon juice, mustard, and vegetable or olive oil. Undoubtedly, it is better, but if you don’t want to do it, you can buy it in the store. If you buy, then choose mayonnaise with natural composition and minimum shelf life.

The next thing I do is put a frying pan on the fire. I pour vegetable oil into it and heat it up. In the meantime, pour flour into a bowl.

Roll each circle in flour on both sides and fry in a pan until golden brown, also on both sides.

Everything is very, very simple. Fry the zucchini until all the zucchini you cooked for frying run out. I fried a few zucchini.

I have young zucchini. Large zucchini have very large seeds and are coarser. They look young and neat when served and are very delicate in taste.

Zucchini must be fried in flour. So they get a beautiful crispy crust.

I fried without dipping in flour, then zucchini, when you smear it with mayonnaise and garlic, juice is released. Properly roll each circle in flour.

After I fried the zucchini in a pan. I line a thin plate with paper towels.

I spread the fried circles of zucchini on a plate. In order to remove excess fat from zucchini. This is the second secret.

Thus, having overcooked all the zucchini in a pan, let them cool. And then we coat each circle with garlic and mayonnaise.

There is nothing difficult in this. For each circle, I spread half a teaspoon of mayonnaise and distribute over the zucchini.

If mayonnaise was not enough, then you can cook more. Add garlic to taste. Someone likes spicy, then add more garlic. I don't like spicy. I'm adding a couple of pieces. Salt to taste, and add greens if desired.

I smear each circle of zucchini and stack one on top of the other. So I stack 4 pieces. like a pyramid. Thus, you can beautifully serve guests at the table.

Decorated the zucchini with herbs and fresh tomatoes. You can sprinkle the zucchini with herbs on top.
