  1. They make a dough: kefir is mixed with sugar, half a glass of flour and yeast. Dry yeast is added as is. Pressed yeast must be prepared in advance. Such pancakes are prepared on the basis of a recipe for thick yeast pancakes.

Ingredients:

  • kefir - 1 glass;
  • wheat flour - 1 cup;
  • chicken egg - 2 pieces;
  • yeast - about 30 g pressed or a similar amount of powder;
  • oil - 80 g;
  • fresh heavy cream - a third of a glass;
  • sugar to taste;
  • salt to taste.

Additionally:

  • fat for frying.

Cooking:

  1. First of all, the yeast is diluted in a warm mixture of kefir, a small amount of flour and a pinch of sugar. Leave for at least half an hour.
  2. The yolks are separated from the proteins, mixed with oil and seasonings and turned into a homogeneous cream.
  3. The mass is added to the dough.
  4. Gradually add the remaining flour to the dough. If you sift it through a sieve, you will be able to cook more magnificent pancakes on kefir. Make sure that there are no lumps left in the dough, and let it stand for three quarters of an hour.
  5. Whip the cream to peaks and with careful movements so that they do not settle, mix into the kefir dough.
  6. The same should be done with egg whites.
  7. The frying pan is heated, if desired, greased and pancakes are baked in the same way as other types of thick pancakes on kefir.

    5. Leave the base to infuse. Kefir will combine with semolina in about half an hour, it will absorb liquid and increase in volume, become heavier and sink to the bottom of the container.
    6. Before baking, diligently loosen the dough and immediately start cooking in a hot frying pan in the same way that ordinary thick pancakes are baked on kefir.

    This is one of my favorite pancake recipes - thick lush pancakes on kefir, I like the recipe for its simplicity, well, pancakes taste excellent. In terms of thickness, they resemble classic yeast ones, that is, they are thick, but not so thick that they can be called pancakes or pancakes. The dough is kneaded thick, but not heavy. To make the pancakes airy, I use the usual baking powder for the dough - it rises the dough perfectly, but at the same time the pancakes do not have a taste of soda, which I personally do not like at all. Pancakes are soft and tender in their structure. They are best fried in a non-stick pan. Before each pancake, I put at least a few drops of oil on the surface of the pan, and when the pancake needs to be turned over, I first run it with a spatula in a circle, separating the edges of the pancake from the sides of the pan, and only then I pick it up in the place where the pancake best leaves.

    Ingredients for 10 pancakes:

    • 2 eggs,
    • 7 tablespoons flour
    • Kefir - 2 cups (0.5 liters),
    • Sugar - 3-4 tablespoons,
    • Salt - a pinch
    • Baking powder - 1 teaspoon (or baking soda - 1/3 teaspoon),
    • Vegetable oil - 2 tablespoons for the dough and 3 for frying.

    How to cook fluffy pancakes on kefir

    The easiest way to start preparing the dough is with eggs. We break them into a bowl. Add salt, sugar and beat with a whisk without much zeal - just to stir the eggs.


    Add two cups of kefir and vegetable oil. For such pancakes, I take fatty kefir - 3.5 percent. We mix.


    Now flour. I specifically took off what the flour looks like on a tablespoon. See the big hill? This happens when you scoop up flour by dipping a spoon deep into the bag.


    Mix flour into the dough. And at the end add baking powder or soda.


    Beat with a whisk until completely smooth and bubbles appear.


    Pour a little oil into a well-heated pan, then pour a ladle of dough into the pan. We reduce the heat to medium - we need the pancake not only to be fried to a golden crust, but also to be baked inside. When the surface of the pancake ceases to be liquid and holes appear on it, the pancake needs to be checked - how well it is fried from the bottom - because if it is poorly fried, then it can turn over badly, wrinkle and even tear. But if you faked a pancake from one side and saw an even brown crust, then you can turn it over.


    You need to do this as follows - first, draw a spatula in a circle, unhooking the edges of the pancake from the pan, and only then pry off the pancake, passing under it with a spatula to the center. On the second side, the pancake is fried quickly - literally a minute.


    We stack the finished pancakes on a plate and if you do not want the edges to be crispy, then cover the top of the stack with a large bowl.

    Lush pancakes on kefir are amazing in taste. They can be eaten just like that, without everything - as my children do - or with jam, sour cream, fresh or frozen berries, whipped cream.
