She gathers in folds and sticks into the finished product even worse than tin. And silicone molds do not require grease. And finished products from them are very easy to get.

But products in silicone are prepared a little faster than in tin forms, and this must be taken into account. Try new material and you'll see how easy it is to handle.

What you need to know about silicone housewife

Why are these modern molds better than the old proven grandmother's tin? First, the soft material bends and even turns inside out. Those who have ever tried to pick a cupcake out of a tin mold with a knife will understand the advantage of silicone.

Secondly, the material does not need to be greased. It is environmentally friendly and does not give products a metallic taste.

And finally, thirdly, you can bake cupcakes in silicone molds both in the oven and in the microwave. But you can't put a tin can in a microwave oven.

What are silicone molds? Separate - both for a large cake, and for small portioned cakes. There are also single cast forms with a number of recesses. These are convenient to fill with dough, and if necessary, turn in the oven.

Silicone molds also vary in shape. But more popular classic ones are used - in the form of a truncated pyramid with corrugated sides.

If you are going to use silicone molds for the first time, you need to wash them thoroughly in hot water, and grease before filling with dough. With further culinary processes, this will no longer be necessary.

Secrets of Successful Baking

Whatever recipe we choose for cupcakes in silicone molds, a constant temperature must be set in the oven. temperature regime. Do not open the oven door during the first 20 minutes of cooking, otherwise the dough will fall off. It is also not recommended to move and rotate the molds. To make the dough more airy, it is worth separating the whites from the yolks. But putting them in the refrigerator is not recommended - all ingredients must be at the same temperature. Do you want your cupcakes to stay fresh for a long time? Then add a little (spoon) starch to the flour. The readiness of cupcakes is best checked with a toothpick: if the skewer comes out dry, you can turn off the oven. But what if the product starts to burn on top, but inside it is still damp? Cover cupcakes with foil. Finished products are not recommended to be taken out of the molds hot. Let them cool down completely. Then the shape of the cupcakes will not be damaged. Glaze - if it is provided by the recipe - is also applied to cold products.

We prepare dough for products in the traditional way, just as our grandmothers did, preparing to bake them in corrugated tins. Any cake requires premium wheat flour, sugar, milk or products derived from it, and eggs (although now, to please vegetarians, people have come up with recipes without them).

To make the product lush, all ingredients must be at the same temperature. So get three eggs out of the fridge ahead of time. Sift one and a half cups of flour through a sieve. So it will be saturated with oxygen, which will make the dough even more magnificent.

Now no one is surprised by muffins. IN Lately they are at our peak of popularity. And I think that this is not happening at all by chance - they are prepared so easily and simply that even children cook them.

Moreover, this unpretentious pastry always turns out to be very tasty. Which by the way encourages them to further culinary experiments. I have a guy friend who started his acquaintance with baking confectionery from these cupcakes, and now he bakes delicious complex cakes.

And indeed, if you have never baked before, and you want to start somewhere, then this delicious pastry is just what you need. By following just a few simple rules and having very little free time, you can have delicious homemade cakes every day. Sweet or not sweet!

Yes Yes! These delicious little items can be prepared just for breakfast, serving them instead of bread, or you can bake them for tea! And what is important, you can cook them so often, and not repeat at all - after all, with what kind of filling they are cooked. I will not even list them, because it will probably be easier to name the toppings with which they are not prepared!

I will tell you about all the basic rules and various fillings when I share recipes with you. But what needs to be said at the beginning is that these small cupcake-like confections come in English and American.

And just what we are used to cooking under this name is American samples. And unlike their English counterparts, who are baked from yeast dough, consists in the fact that they are prepared from flour with the addition of baking powder or soda, or both together.

But do not confuse them with cupcakes, which have a different form of the finished product and a different cooking technology. In addition, muffins are fatter, although they are more “light - airy”, and if they are fatty, then they are more high-calorie, and their close American relatives have fewer calories.

And if you replace part of the oil in the recipe with low-fat kefir or yogurt, and part of the flour with cereals, and at all can be practically dietary. But, more on that later.

Now let's move on to the recipes. There are a lot of them today, as they say, for every taste.

A classic American muffin can be prepared with bran, and usually without filling at all, or with candied fruits, nuts, dried fruits.

However, the recipe is basic. Knowing it, you can add various additional ingredients, change the taste and cook many different options. It will no longer be called classic, but its essence will not change from this.

We will need:

  • flour - 200 gr
  • sugar - 100 gr
  • butter - 100 gr
  • milk - 100 ml
  • egg - 1 pc.
  • baking powder - 1 teaspoon
  • vanillin - a pinch
  • salt - a pinch

Cooking:

1. Remove the butter from the refrigerator and cut it into small pieces.

2. Using a whisk, beat the egg into foam. Continuing to beat, add butter and vanilla.

3. Pour in slightly warm milk and mix everything well again until smooth.

4. Sift flour and baking powder into a separate bowl. It is best to use flour of the highest grade. As you know, these cupcakes get stale pretty quickly. Premium flour will slow down this process somewhat. Add sugar and a pinch of salt. Mix everything.

There is one simple rule sweet pastries you need to add a pinch of salt, and in not sweet - a pinch of sugar. This allows you to make pastries even tastier.

5. Add the liquid component to the dry mixture and mix with a spoon. In this case, the dough is no longer mixed with a mixer.

It is believed that to prepare classic muffins, it is necessary to separately mix the dry and liquid components, and then pour the liquid component into the flour and mix thoroughly with a spoon.

However, this rule does not always apply. And there may be recipes where the sequence of adding the ingredients may be slightly different! But not in the classic version, that's why its name is to do everything strictly according to the rules!

6. Spread the resulting mixture into silicone molds, filling them into 2/3 parts. They need to be lubricated first. vegetable oil. Often, special paper inserts are also inserted into the forms, and the dough is already laid out in them.

When serving pastries in paper molds, it looks much more aesthetic, and besides, it is much easier to take them in a paper cup than just by hand.

7. Preheat the oven to 180 degrees.

8. Bake for 25 minutes until done. Readiness is determined in a way known to all. If you pierce the pastry with a toothpick and there is no batter left on it, then the pastry is completely ready.

9. Allow them to cool slightly and put on a dish. You can decorate with icing, grated chocolate or just sprinkle with powdered sugar.

To give a fresh taste to the dough, you can add the zest of half a lemon. And it should be remembered that you need to rub only the yellow part of the lemon, since the white part is bitter. It will give baked goods a bitter taste.

The next recipes for which muffins are most often prepared are recipes with chocolate. They are prepared both with pieces of chocolate, and simply with the addition of cocoa. Let's look at both recipes.

Remember which chocolate is tastier, regular or with nuts and raisins? However, someone prefers regular chocolate without any additives. Therefore, it's up to you to decide!

And now for the next chocolate recipe.

With chocolate chips

This is essentially the same recipe as the previous one, except that it is prepared not with cocoa powder, but with chocolate. I love to cook such pastries with dark bitter chocolate. In this case, sweetish products are obtained with a slight bitterness. But this recipe is likely to appeal to lovers of dark chocolate. And those with a sweet tooth will like this cake with milk chocolate.

6. Preheat the oven to 200 degrees. Bake for 20-25 minutes until fully cooked.

7. Remove from the oven, let cool, then remove from the molds.

In this recipe, you can also add any nuts and raisins as additional components. If you add nuts, carefully sort them out and peel them, otherwise troubles in the form of a broken tooth may arise!

With chocolate pieces according to the classic recipe

According to this recipe, we also prepare pastries with chocolate pieces, but we do it according to the classic version. And it is fundamentally different from the two already proposed chocolate recipes. Let's take note of that too.

We will need:

  • flour - 200 gr
  • sugar - 100 gr
  • vanilla sugar - 10 gr (bag)

  • dark chocolate - 80 gr
  • eggs - 2 pcs (large)
  • cocoa powder - 3 teaspoons
  • baking powder - 2 tsp
  • salt - a pinch

Cooking:

Since we have a classic recipe, we remember that according to it, all dry and all liquid components are mixed separately. And only then do they join.

1. Sift flour and baking powder into a bowl, add sugar, vanilla sugar, salt and cocoa.

2. In a separate bowl, beat the eggs with a whisk. Continuing to beat, gradually add milk, melted butter. Whisk everything well until smooth.

3. Pour the liquid mixture into the dry mixture and mix with a spoon. We do not use a mixer so that the dough does not fall off during baking. Mix quickly but thoroughly. The dough should not be very thick and may even be slightly lumpy.

4. Cut the chocolate with a knife into small pieces and add to the dough. You can leave a little chocolate, then stick them into the dough.

5. Lubricate the baking molds with oil, if there are paper liners, use them.

6. We spread the dough, filling the form into 2/3 parts. If you left chocolate, then press it on top of the dough.

7. Heat the oven to 175 degrees and put a baking sheet in it.

8. After 20-25 minutes, the baking should be checked with a toothpick. If they are ready, then the oven must be turned off, and the baking should be kept in it for another 5 minutes. Then take it out, cool a little and pull it out of the molds.

9. Pour tea into cups for everyone and eat your favorite pastries with pleasure!

But such a recipe offers us Julia Vysotskaya.

This recipe involves adding white and dark chocolate to the dough.

With cottage cheese according to the classic recipe

We will need:

  • flour - 160 gr (1 cup)
  • cottage cheese - 200 gr
  • sour cream - 50 gr
  • eggs - 2 pcs (large)
  • sugar - 200 gr
  • butter - 70 gr
  • baking powder - 1 teaspoon
  • soda - 0.5 tsp
  • salt - a pinch

Cooking:

1. Beat the eggs into foam with a whisk, add sugar and beat the mixture until the sugar is completely dissolved.

2. Not very fatty cottage cheese, you can take 9%, grind through a sieve and add to the resulting mixture along with vanilla sugar. Mix.

3. Add sour cream and melted butter, mix everything.

4. Sift flour and baking powder through a sieve, put a pinch of salt and soda into the mixture.

5. Pour the liquid component into the flour mixture and knead the dough without lumps of a uniform consistency.

6. Grease the molds with oil and put the dough in them, filling them into 2-3 parts.

7. Bake at a temperature of 180 degrees a little longer than usual for 30-35 minutes. The dough with cottage cheese is denser and therefore it takes more time to bake.

8. Remove the finished pastry from the oven, let it cool slightly. Sprinkle with powdered sugar and serve with hot tea or coffee.

With cottage cheese, as you know, raisins go very well. Therefore, if you wish, you can add it to the dough and bake pastries with an even more enriched taste!

If you add raisins, then it must be thoroughly washed and then dried. And only after that add to the dough, otherwise the water will not allow the dough to rise well in the molds.

orange muffins

I cook this recipe with oranges, but you can cook according to it by adding any fruits or berries. According to the same recipe, you can cook by adding lemons, tangerines, kiwi, apples, pears, or whatever you want. The recipe is just as simple. like everyone else, but the pastry itself is simply delicious.

We will need (for 12 pieces):

  • flour - 200-250 gr
  • sugar - 120 gr
  • vanilla sugar - 10 gr (sachet)
  • butter - 100 gr
  • egg - 3 pcs
  • baking powder - 1 hour. spoon with slide
  • orange - 1 pc.
  • walnuts - 12 halves
  • salt - a pinch

Cooking:

1. Remove the oil from the refrigerator in advance and let it stand for a while. Add sugar to it and beat with a whisk.

2. Add sugar and vanilla sugar, continue beating. Then add the eggs one by one.

3. Wash the orange and wipe it with paper towels. Grate the zest on a fine grater, using only the orange part. We do not touch the white part, it is bitter and will give the baking a bitter taste.

4. When all the zest is rubbed, squeeze the juice out of the orange. You can squeeze it straight with your hands, it's not difficult to do it. Juice will turn out about 100 ml, this will be enough.

5. Sift flour and baking powder through a sieve, stir in salt.

6. Add the liquid component to the flour mixture along with the juice, and mix thoroughly with a spoon. The dough should not be very thick. The recipe says that we need 200-250 grams of flour, it depends on how much orange juice you get.

7. Lubricate the molds with oil, if any, then place paper molds in them as well. Then fill them with dough for 2/3 parts. Put half a walnut on top. It will be delicious and beautiful.

8. Preheat the oven to 180 degrees. Bake for 30-35 minutes until fully cooked.

9. Eat with pleasure!

This recipe is one of my very favorites. Finished products are so delicate and refined that everyone is simply amazed. In addition, their taste is perfectly combined with the aroma of orange and gives an amazing note that evokes the most positive emotions!

Video on how to make Orange Carrot Muffins

And here is another recipe for orange cupcakes, but it also has carrots as an additive. Due to it, baking is incredibly tender and airy.

Even those who have never cooked can cook them according to this recipe. The only difficulty is not to forget to put anything into the dough from the ingredients. And for its kneading, we do not even need a mixer.

Look how handsome! And you know how delicious! Freshly squeezed orange juice gives them freshness and unforgettable taste. And also a light fudge that can be prepared in 10 seconds.

Be sure to cook this yummy. The recipe is just great!

banana muffins

It is also the favorite type of baking for millions of people. And they are prepared both with bananas alone and with additional additives. Since the banana is practically not felt in the baked product, I like to add nuts and pieces of chocolate to the dough, or one or the other.

Therefore, if you want to cook pastries only with bananas, then do not add any chocolate or nuts. All other ingredients are laid in the same proportions as in the recipe. And I, perhaps, will prepare them with additives.

We will need (for 20 pieces):

  • flour - 350 gr
  • milk - 300 ml
  • butter - 115 gr
  • sugar - 100 - 150 gr
  • egg - 2 pcs
  • baking powder - 2.5 tsp
  • baking soda - a pinch
  • vanillin - 10 gr (sachet)
  • salt - a pinch
  • banana - 2 pieces
  • dark chocolate - 80 gr

Cooking:

1. Mix all dry ingredients, namely sifted flour and baking powder, soda, sugar and salt. Add sugar to your taste, either 100 or 150 gr, depending on how sweet you are.

2. Now let's prepare the liquid component. To do this, beat the slightly melted butter together with the eggs until a smooth, homogeneous mass. We use a whisk for this.

3. Continuing to whisk, gradually pour in the milk.

4. Peel bananas and crush with a fork in mashed potatoes. It's okay if there are small pieces left. It's always nice when tangible pieces of fruit come across in baking. Although in this case, the entire banana will completely dissolve in the dough.

5. Chop or roll nuts with a rolling pin on a cutting board or towel. Sort the nuts beforehand, remove the partitions and the shell. It is not necessary to roll the nuts strongly, the pieces should remain quite tangible.

6. Chop the chocolate into pieces about 0.5 cm in size.

7. Combine the liquid component with the flour, add banana puree, nuts and chocolate. Leave some of the chocolate to press it into the products already directly in the mold. Mix the contents only with a spoon.

8. Lubricate the molds with oil, line them with paper blanks, if any, and fill 2/3 with the prepared dough.

9. Preheat the oven to 200 degrees and bake for 25 minutes until done. Readiness is determined with a toothpick.

10. We take out the finished products and let them cool slightly. Then we take it out of the molds and serve with hot tea or coffee. And someone likes to taste such hot pastries with cold milk!

11. Eat with pleasure!

The products turned out to be not at all sweet, only slightly sweetened, which my family really liked. Pieces of dark dark chocolate really appealed to me, since this is the kind of chocolate that I love the most.

And of course the taste finished products was very different than if we cooked them with just bananas. It turned out to be richer and more saturated.

Banana with carrots

If you do not use chocolate and nuts in the previous version, then you can cook pastries with the addition of carrots. And believe me, they turn out to be no less tasty and are eaten just in one breath. Here is the prescription.

We will need:

  • flour - 2 cups
  • butter - 125 gr
  • sugar - 100-150 gr
  • egg - 2 pcs (large)
  • baking powder - 1 teaspoon
  • soda - 1/2 teaspoon
  • vanilla sugar - 10 gr (sachet)
  • salt - a pinch
  • bananas - 2-3 pieces
  • grated carrots - 0.5 cups (1 piece)

Cooking:

1. Sift flour and baking powder, add sugar, vanilla sugar, soda and salt, mix.

2. Peel bananas and mash with a fork to puree or chop with a blender.

3. Grate carrots on a fine grater.

4. Remove the butter from the refrigerator in advance and let it stand for a while so that it becomes soft.

5. Beat the eggs with a whisk and then mix with the butter.

6. Combine dry and liquid mixture, add banana puree and grated carrots. Use a spoon to knead the dough.

7. Lubricate the molds with oil and bake for 25-30 minutes at a temperature of 180 degrees.

And here is another recipe with carrots.

From pumpkin with carrots

I began to cook such pastries quite recently, which is called the case helped! Not so long ago I was cooking, and I have left pumpkin puree. It, of course, was very tasty in itself, and you could just feast on it.

But I had an unclaimed recipe that I had long wanted to cook. So I put the puree in the fridge until the cake was eaten. And finally, after a couple of days, I started making muffins.

We will need (for 20 pieces):

  • flour - 2 cups
  • butter - 125 gr
  • granulated sugar - 200 gr
  • eggs - 2 pcs (large)
  • sour cream - 3 tbsp. heaped spoons
  • pumpkin puree - 1 cup
  • shredded carrots - 1 cup (about 2 carrots)
  • vanilla sugar - 10 gr (sachet), or vanilla extract - 1 teaspoon
  • soda - 1 teaspoon
  • baking powder - 1 teaspoon
  • ground cinnamon - 1/2 teaspoon
  • salt - a pinch
  • nuts - optional (handful)

Cooking:

1. Slightly melted butter at room temperature with sugar using a whisk. Beat in the eggs one at a time and mix until smooth.

2. Add grated pumpkin puree. Mix with a spoon. To make the pie, I baked the pumpkin in the oven, then pulled out the pulp with a spoon and mashed it.

I think you can also use fresh pumpkin, just rub it on a fine grater. You can bake the pumpkin in the microwave or oven, and then mash it, or you can stew it in a small amount of water with the addition of honey and only then grind it into a puree.

In my opinion, all methods are good. Of course, this lengthens somewhat. fast way cooking the muffins themselves, but you know, it's worth it. Their taste is simply amazing and unlike anything else!

3. Sift flour and baking powder into a separate bowl, add salt, soda and cinnamon, mix.

4. Mix both masses with a spoon and add carrots grated on a fine grater. The dough turns out to be a pleasant orange color, not very thick, well, not liquid, of such an average consistency.

5. Grease the molds with oil and line them with paper liners, if you have them. If not, then only molds will suffice. Fill molds 2/3 full with batter.

6. Preheat the oven to 180 degrees and place the baking sheet with molds in the oven for 10 minutes. Then reduce the temperature to 170 degrees and bake for another 10-15 minutes until done.

7. Take out the finished baking, let it cool slightly and eat with pleasure.

I must tell you that the pastries are very tasty, I would even say the most delicious. In addition, they turned out to be a beautiful sunny color, and this is very uplifting!

Recipe with cheese and bacon

I specially picked up a video that shows very clearly how appetizing and tasty unsweetened cupcakes are. And having prepared these for breakfast, you will surely please your whole family on a Saturday or Sunday afternoon.

Recipe with cottage cheese and zucchini

Another non-traditional unsweetened recipe for making pastries for breakfast.

We will need:

  • flour - 200 gr
  • cottage cheese - 200 gr
  • butter - 100 gr
  • egg - 3 pcs (large)
  • zucchini - 1 small
  • dill - 5-6 sprigs
  • baking powder - 1 teaspoon with a slide
  • salt - 1/4 teaspoon
  • sugar - a pinch

Cooking:

The dough for such baking should be prepared without delay. Zucchini will give juice, but we do not need it. Therefore, we do everything quickly, and for this, everything should be at hand.

1. Immediately prepare the baking molds. Lubricate them with oil, or put special paper liners in them.

2. Remove the butter in advance so that it melts slightly.

3. Beat eggs with a whisk and mix with cottage cheese. Cottage cheese can be used with medium fat content and any consistency, even coarse-grained, even fine-grained.

4. Use medium-sized zucchini so that there are practically no seeds in it. Such a zucchini will not give a lot of juice and pastries will rise better.

Grate the zucchini on a medium grater, squeeze the juice from it if necessary and add to the egg-curd mass.

5. Add soft butter, chopped dill, sugar and salt to the resulting mixture, mix with a spoon.

6. Sift flour and baking powder there, mix.

7. Fill the molds to 2/3 of the volume.

8. Put in an oven preheated to 180 degrees and bake for 25-30 minutes until fully cooked.

9. Let it cool down a bit and eat with pleasure.

  • with any smoked - boiled meat (ham, loin, brisket, sausage ...)
  • with chicken (with boiled and smoked), with chicken and mushrooms

  • with any mushroom
  • with spinach, with spinach and cheese
  • with avocado
  • with herbs, garlic
  • With canned corn or green peas
  • with black olives or olives

And all these ingredients can also be combined with each other.

As you already understood, the recipes for preparing this simple and unpretentious pastry exist simply great amount. It is due to the fact that the dough for them is prepared the simplest, you can add the most diverse fillings to it.

In order for your cupcakes to always turn out risen and tasty, let's take a closer look at the basic rules for their preparation. In this case, you will not be tied to any of the recipes, but you can always cook pastries to your liking.

1. It is believed that the correct proportions for baking should be 2 parts flour, 2 parts liquid, 1 part butter and 1 part eggs. That is, if you use 200 grams of flour, then you will need 200 grams of milk, 100 grams of butter and 1 egg. Sugar can be added to your taste, someone likes sweet pastries more, someone less sweet. Usually 100 grams of sugar is added to this amount of flour.

2. A pinch of salt is always added to sweet pastries, and a pinch of sugar to unsweetened ones.

3. If fermented milk products are used, then a little soda should be added along with the baking powder.

4. A feature of the preparation is that all dry components are mixed separately, and liquid components - separately. After that, the liquid components are poured into the dry ones.

5. When mixing the liquid and dry parts, use only a spoon. The dough should not be kneaded for long, just mix and that's it. It is allowed that the dough may remain slightly lumpy.

When kneading with a spoon, the dough is less porous. And when kneading with a mixer, on the contrary, it becomes too airy.

6. Due simple test baked goods can go stale quickly. To prevent this from happening, the molds must be lubricated with either butter or sunflower oil.

If we also use special paper liners, then it is not necessary to lubricate the form,

7. Molds can be used silicone or any other. There are special paper ribbed liners. You can mix them into basic shapes. They also keep baked goods from drying out quickly. In addition, such pastries are more convenient to eat and store.

8. If you did not find molds, then you can make homemade ones from baking paper, tie them with twine and bake in this form. It will be not only tasty, but also beautiful. The presentation method will surprise and delight everyone present.

9. When the pastries are ready, they must be allowed to cool slightly. Then put on a plate and cover with a towel. So it will retain its softness longer.

10. Cupcakes are baked at a temperature of 180 to 200 degrees. Depending on the recipe, sometimes the temperature is initially set alone, and after a short amount of time, it decreases.

11. The readiness of baking is determined with a toothpick; when pierced, no batter should remain on it. And when pressed - baking should be elastic.

12. Readiness can also be determined visually. Ready-made pastries should rise well, brown and easily move away from the walls of the mold.

13. If, for some reason, you couldn’t eat everything at once, then the pastries can be frozen. To do this, wrap it in cling film, release all the air and place it in freezer. You can take it out anytime and heat it up in the microwave.

These are the basic rules for preparation and storage.

You can also focus on how to cook your favorite pastries with fewer calories. For this you can:

  • reduce the amount of butter. Add more kefir, yogurt or milk with a small percentage of fat.
  • sugar can be replaced with honey or fruit and berry purees
  • dairy products can also be replaced with fruit juices or fruit purees.
  • flour can be partially replaced with oatmeal, or flour with bran can be used, or even fiber, which can be purchased at any pharmacy.
  • by the way, you can cook pastries from cornmeal, this is how they prepare this pastry in America.

What is the difference between muffins and cupcakes?

The closest relative of our today's hero is a cupcake. Sometimes these two concepts are confused and do not see much difference in them. Now let me tell you how they differ.

Well, first of all, they different shape. Cupcakes are usually baked large, round or rectangular. And our products are baked in small molds.

You will say that there are also small cupcakes baked in small molds. I agree with you. To distinguish them, there are other differences.

Secondly, cupcakes use butter dough, they are fatter and therefore more high-calorie. In cupcakes, the oil can be partially vegetable, and when consumed, it is more noticeable. In muffins that used a good 82.5% oil, it is not felt at all.

Thirdly, a significant difference is in the method of kneading the dough. When preparing dough for cupcakes, all components are carefully knocked down with a mixer, and this makes the dough more airy. And for their fellows, the dough is kneaded with a spoon, and even then quickly enough. Therefore, it can turn out to be somewhat lumpy and heterogeneous.

Fourthly, when preparing our pastries, dry and liquid components are first mixed separately, and only after that they are combined. For cupcakes, sugar is mixed with butter, and then other ingredients are added.

Somehow I met interesting comparison, and I remember it, but the meaning is that muffins are a cross between a cupcake and a mini-cake or cupcake. If you add more sugar to the dough, and decorate the finished pastry with cream, you get a mini-cake. And if, on the contrary, reduce the amount of sugar, and add milk and eggs, you get a cupcake.

And so another relative appeared - this is a cupcake. What is it, and how does it differ from its counterparts.

Cupcake "cupcake", as you probably already understood, is a mini-cake. In past centuries, it was baked in small ceramic cups, hence the name.

It is very easy to distinguish them from their relatives - they are decorated with cream, icing, whipped cream and other decorations that are used to decorate all large cakes.

Well, now that we have dealt with all the nuances and secrets of cooking, found out how they differ from their closest relatives, and also got acquainted with many recipes, we can safely start baking.

Knowing all this, you will always get delicious and fragrant pastries, and the one you want to bake using the products that are at your fingertips!

And I really hope that today's great article will help you in this! Therefore, cook muffins, please yourself and your loved ones with delicious homemade cakes. After all, what could be better in the house than the aroma of fresh bread or the smell of freshly baked goods!

Cupcakes in silicone molds - general principles of preparation

Silicone molds greatly facilitate the process of making cupcakes. Baking in them does not stick and evenly baked. Molds do not need to be pre-lubricated. However, if such molds are used for the first time, they should be washed in warm water, and before baking, grease with oil, the next time you do not need to grease the molds. Molds are classic (in the form of a truncated cone), square, round or figured. Such forms are considered environmentally friendly, their use is absolutely harmless to health. Cupcakes in silicone molds do not have a specific smell and taste. Silicone baking molds are resistant to high temperatures and very easy to clean.

Silicone molds can be individual or they can be a single mold with several recesses. Cupcakes in silicone molds are baked much faster than in other dishes. The dough for such baking is no different from the dough for cupcakes baked in another way. The main ingredients are naturally flour, sugar and butter (butter or vegetable). Eggs are on the list of ingredients for most cupcakes, but there are also recipes where eggs are not used. Milk, sour cream or cottage cheese are also added to the dough.

So that the cupcakes do not turn out to be too ordinary and “boring”, nuts, raisins, chocolate pieces, candied fruits, cocoa powder, etc. are added to the dough. And to make the pastries fragrant and appetizing, you can add nutmeg, cinnamon, ginger along with vanilla , cardamom and even ground black pepper. Ready cupcakes can be sprinkled with powdered sugar or covered with icing.

Cupcakes in silicone molds - preparing food and utensils

To make cupcakes in silicone molds, you will need a dough bowl, a sieve for sifting flour, a measuring cup, a mixer and, of course, silicone molds. If the molds are being used for the first time, rinse them with water and oil them before filling with oil.

You need to measure the required amount of all ingredients. The flour should be sifted - so the pastries will turn out more magnificent and rich. The butter needs to be softened or melted, the milk needs to be warmed up a little. Eggs should also be at room temperature, so they should be taken out of the refrigerator in advance.
