To make sure that chokeberry jam is really not difficult to preserve, I advise you to watch the video recipe:

Chokeberry jam with apples - for real gourmets! Thick, slightly tart, with a bright, rich taste and a slight aroma of cinnamon. I confess that I prepared such a jam for the first time and when I decided to try this recipe, I did not expect to get such an amazing result. The yummy is incredible! Chokeberry berries turn out sweet and juicy, only a slight hint of their original viscous astringency remains. Apple slices are the perfect complement to the berries. They do not boil in mashed potatoes, but on the contrary, they turn out to be dense and, having been soaked in rich sweet syrup, amazingly beautiful! Well, cinnamon. To add it to jam or not to add it is a matter of taste. But in my opinion, it is the delicate aroma of this spice that ultimately gives such a wonderfully harmonious result!

Ingredients:

  • chokeberry - 700 g,
  • sugar - 1 kg,
  • apples - 350-400 g,
  • water for syrup - 200 ml,
  • lemon - 0.5-1 pc.,
  • cinnamon (optional) - 0.3-0.5 tsp

How to make blackberry jam with apples

We wash the chokeberry under cool running water, cut off all the tails and put them in a colander or sieve.

Pour water into a saucepan (so that it completely hides the berry), bring it to a boil and lower the blackberry into boiling water. Boil the berries for 5-7 minutes, then take out and let the water drain.

At the same time, prepare the syrup. Pour about 2/3 of sugar into a saucepan, add water to the same place, put the saucepan on the stove and, with constant stirring, bring the syrup to a boil. After boiling, let the syrup gurgle for 3-5 minutes - and the syrup is ready. The sugar must be completely dissolved.

After that, we remove the jam from the stove and, closing the saucepan with a lid, leave it to stand for 8-10 hours. I left it overnight, and in the morning I added apples to the chokeberry.

But first they also need to be prepared. We clean the apples from the skin and seeds, then cut into slices about 2-3 mm thick.

Dip the apple slices in boiling water, let them boil for 7-10 minutes. and, throwing them in a colander, immediately after cooking, cool them with a stream of cold water.

Pour the remaining sugar into the syrup with chokeberry, bring it to a boil and let it boil for literally 2-3 minutes.

Then we introduce cooled apple slices into the jam, lemon juice and cinnamon. Adjust the amount of lemon juice and cinnamon to your taste. I ended up adding the juice of a whole lemon and 0.5 tsp. cinnamon.

We boil the chokeberry with apples for 10 minutes, noticing the time after the jam boils, then remove it from the stove and again leave it to infuse for 7-8 hours. This is what the jam looks like after the second cooking.

After insisting for the third time, boil the jam for 10 minutes, turning on the medium heat of the stove - and it's ready! You can pour it into jars both hot and cooled. It is only important that the jars are sterile and dry.

Hot jam is a little watery, but the syrup will thicken as it cools. You can store it in the room and in the refrigerator.

Bon appetit!

Moreover, there are many recipes for such a delicacy - the addition of one or another component significantly complements the taste. And before moving on to all this diversity, you first need to understand the features of harvesting.

Harvest berries on time, preserving useful properties

Harvesting of chokeberry occurs in the second half of summer, when it is filled with ripeness and ripen together with other shrubs. Depending on the methods of storage, the clusters are separated from the bush with secateurs or, in fact, the berry is collected. Further, the path of the chokeberry goes directly to the canning jars. You can send aronia to freeze. Also, the berries are dried and then they:

  • go to decoctions that increase immunity;
  • used as a means of lowering blood pressure;
  • are a powerful stimulant for the prevention of atherosclerosis.

Experienced gardeners leave the surplus of the crop that did not get into processing and remained on the bushes until spring - this will attract the right birds to the garden and make it possible to feast on a sweet berry right from under the snow. Having such a valuable product at home, you can significantly improve your health and the well-being of your loved ones.

The best recipes from healing berries

The peculiarity of chokeberry is that the berry itself, useful as a medicine, has a specific, astringent taste, which is more likely to be appreciated by an amateur than a mass consumer.

But in jams and jams from aronia, this property is not felt so brightly - just a pleasant astringency. Therefore, I recommend everyone to cook at least a couple of jars for testing, I think that from the list below everyone will be able to choose the right recipe.

Tip: if medicinal qualities are primarily important, choose a cooking method where heat treatment is minimal.

Recipe for chokeberry jam with cherry leaf

By adding a cherry leaf to the jam, housewives turn it into a celebration of culinary art. A slight rearrangement of the components - and now you are tasting the sweet poetry of a fragrance that you will never be able to refuse! It takes 3 days to prepare, so be patient.

If you don’t have the patience to make 4 brews, then get by with one from 40 to 50 minutes, however, in this mode of temperature exposure and intensity, they will become soft, lose their elasticity, and the finished product will rather look like jam.

For cooking, you will need a set of a ladle, a wooden spoon, glass jars and nylon lids for preservation, a colander or sieve, thick gauze, and an enamel pan. Before you start making jam, carefully lay out all these items, each should have its own place in order to create a holiday and pleasure process from ordinary cooking.

Products for cooking:

  • chokeberry - 2 kg
  • sugar - 1.6 kg
  • dry cherry leaf - 200 g
  • water - 1 l.

Step by step method:

  1. Let's start cooking the cherry leaf. Before pouring it with a pre-prepared amount of water, we wash the entire mass several times, sort it out, removing the branches. Then fill the pot with the leaf with water. Turn on the heat, bring to a boil and cook for about 20 minutes.
  2. While our raw materials are being cooked, we are preparing the fruits. We carefully sort through everything, remove garbage. Pour into a sieve or colander and delicately, trying not to damage the chokeberry, rinse in warm water. Let it sit for a few minutes to remove any remaining water. We make several smooth movements up and down, getting rid of the last drops.
  3. Cooking syrup. To do this, we filter the resulting decoction from the leaf, then discard the latter, and add sugar to the water saturated with aroma. Boil until the sand is completely dissolved.
  4. Pour the chokeberry into the finished syrup, set a slow fire, let it come to a boil in this mode. Now, stirring the mass, fragrant with a wonderful aroma, cook and simultaneously remove the foam for exactly 5 minutes. We remove the boiled mass from the burner and leave it to cool and settle overnight. And so that flies or other insects do not spoil our holiday, we cover the pan with prepared multilayer gauze. The temperature in the room is constant, room temperature. The next day, again set the slow fire mode, bring to a boil, and cook, stirring, for 5 minutes. Let cool down for a few hours. Take your time, a good product should have time to settle, then it will become rich and unusually fragrant. The third cooking also lasts for 5 minutes, and then the almost finished jam cools down for several hours.
  5. Thoroughly wash jars and lids for subsequent canning. This is followed by the fourth cooking, after which the ready-to-eat mass is laid out in jars. The lids are waiting for their turn while our marvelous jam cools to room temperature. Now it's time to close it and put it away for storage.

Little tricks:
  • before cooking, do not forget about the optimal concentration of the "cherry" component. If everything is done correctly and not overdone, then the chokeberry delicacy turns out to be just as rich and fragrant as the cherry analogue adored by many;
  • the resulting mass is remarkably "obedient" in storage, and if the jars are not adjacent to heating devices, then it can be enjoyed all winter.

Classic chokeberry jam

Ingredients:

  • 1 kg of chokeberry;
  • 1.3 kg of sugar;
  • 1 glass of water.

Cooking process:

  1. Take a saucepan of a suitable volume, pour water into it and add sugar. Stir until completely dissolved. To do this, the water can be slightly warmed up.
  2. Rinse the berries, remove the stalks from them. Put in a saucepan and dip in boiling water for 5-7 minutes to blanch.
  3. Boil the syrup and pour the blanched berries into it. Boil for 10-15 minutes over medium heat. After that, remove the pan from the heat and leave the mixture to cool for 3-4 hours to room temperature.
  4. Put the pot with the future jam back on the fire, bring to a boil and boil for 15 minutes.
  5. Divide the jam immediately into jars, seal with lids and leave to cool at room temperature. Banks must be clean washed and sterilized.

Such jam is equally well stored both in a room and in a dark, cold room, for example, a basement.

Delicious combination: chokeberry, lemon, apples and nuts

There are so many vitamins in this jam that doctors recommend eating it after severe long-term illnesses and surgeries.

Difficulty: medium. Cooking time: about 70 minutes.

Apples are a great addition to chokeberry jam

Ingredients:

  • black chokeberry berries - 1 kg;
  • sugar - 1.5 kg;
  • lemon - 1 pc;
  • apples (preferably Antonovka or other sour varieties) - 300 g;
  • walnut kernels - 300 g.

Cooking process:

  1. Pour the peeled and washed chokeberry berries with boiling water, leave overnight.
  2. In the morning, take 1 cup of the resulting infusion, mix it with 1.5 kg of sugar and boil until completely dissolved to make a syrup. While it is simmering, add the berries, apple slices and pre-crushed nut kernels. Boil for 10 minutes and let cool slightly for 1-2 hours. Then repeat the cooking process 2 more times for 10 minutes.
  3. When you cook the mixture for the third time, add lemon to it. Pre-scald it, clean it, cut it arbitrarily and be sure to remove the bones - because of them, the jam will be bitter.
  4. Cover the pot with ready-made jam with a cotton cloth and cover with another container of the same diameter on top. So you create an air cushion that will significantly soften the rowan fruits.
  5. Leave this design overnight, and in the morning spread the real jam in sterilized jars and close the lids. Store the workpiece in a cool place (unless, of course, you eat all the jam in a week!).

Quick five-minute jam

Preparing such a jam will take you the least time.

Difficulty level: easy. Cooking time: about 40 min.

Preparing five-minute jam will not take you much time

Ingredients:

  • 2 kg of chokeberry berries;
  • 1 kg of sugar.

For this jam, it is easier to use not the exact number of products in grams, but the proportions: for 2 parts of the fruit, 1 part of granulated sugar.

  1. Blanch the washed berries in boiling water for 5 minutes, then grind in a meat grinder or blender. Mix thoroughly with sugar, put on a slow fire. Heat until the sugar is completely dissolved.
  2. Make the fire a little bigger, wait until it boils and cook for 5 minutes.
  3. Divide the jam into clean, sterilized jars. Set them in a large saucepan, pour water "up to the shoulders" of the cans. After boiling water, sterilize the jam for 20 minutes, then roll up the lids.

If you want, add a little citric acid or baked grated apples to the five-minute jam.

After the jam has cooled at room temperature, put it in the basement for storage. A refrigerator is also suitable - the main thing is that it is dark, dry and cool.

Note! You can easily determine the readiness of chokeberry jam by the state of the berries: as soon as they sink to the bottom, you can remove from the fire.

Dry Kiev jam from mountain ash and plum

This recipe is very unusual. At first glance, it will seem complicated to you, it will require a lot of time and attention. But the result will incredibly please everyone!

Difficulty level: difficult. Cooking time: 60 minutes.

very unusual and original recipe chokeberry jam

Ingredients:

  • 250 g of chokeberry;
  • 250 g of red rowan;
  • 500 g plums;
  • 400 g sugar (of which 300 g for syrup, 100 g for sprinkling);
  • 300 ml of water;
  • 1 g of cloves.

Cooking process:

  1. Rinse the mountain ash, disassemble into small clusters (several berries per branch). Put in the freezer for 30 minutes so that bitterness leaves the rowan and only astringency remains.
  2. Divide the plums into halves and remove the seeds from them. It is better to take the fruits of the "Hungarian" variety, not overripe and hard.

    Remove pits from plums and cut in half

  3. Put the pan on the fire and prepare the sugar syrup. Add fruits to it, boil for 5 minutes. Do not forget to remove the foam during cooking. At this stage, you can add cloves.

  4. Remove the jam from the heat, let it brew for 2-3 hours. Boil the boil in two more passes. You can cook plum and rowan separately from each other, but this is optional.
  5. You can easily determine the readiness of jam by eye. The pulp of the plum, retaining its shape, will become honey, and the red rowan will take on an amber color.
  6. Remove the fruits from the pan with a slotted spoon and put them in a sieve. Wait for the syrup to drain.

    Let the berries and plums drain

  7. Sprinkle plums and rowan berries with fine sugar (you can use powdered sugar). Put on a wire rack and put in the oven for 2.5 hours at a temperature of up to 100 degrees. Make sure the fruits do not dry out.
